Happy Thanksgiving!

We couldn’t make it home to ye olde Wisconsin this year for Thanksgiving, for the first time ever. (Seriously, whoever scheduled Thanksgiving is ridiculous…put it earlier in the year so that it’s not so crunched up against Christmas!) Anyway, we still had a nice celebration for 2 at our apartment, and despite it being just us we still went the while nine yards with the spread. Here’s what we baked and ate:

  • Roast Chicken
  • Mashed Potatoes
  • Sweet Potato Casserole
  • Stuffing with Cranberries
  • Green Beans with Almonds
  • Homemade Cranberry Sauce with Oranges
  • Homemade Gravy
  • Pumpkin Pie with Pecan Streusal Topping

I was a bit nervous about the pie because I improvised with the recipe; the topping was my own invention and I was worried it wouldn’t turn out. But it worked just fine and we stuffed ourselves silly. And now we have enough leftovers to sink a ship!

I took a picture of our Thanksgiving table, but I need to get to bed now– I have a horrible head cold (great timing, I know). But we’ll post them ASAP.

We have a lot to be thankful for. You included! To those who we couldn’t be with this holiday weekend, we love you guys and miss you…

    We missed you a bunch on Thanksgiving.

    It just didn’t feel right not having you all here.

    But we’ll see you at Christmas and that will be great.

  2. That dinner sounds amazing! It doesn’t look like you left anything out, I’m glad you made the sweet potato casserole :) We missed you terribly, but we’ll see you in 3 weeks for Christmas!
